Challenges
Milk powder production requires the drying of liquid milk into a powder in which aromas, flavours and colouring as well as many important components such as protein, fat, carbohydrate, vitamins, minerals etc. are retained. Additional challenges are a uniform moisture content, particle structure and particle size distribution, solubility, dispersability, and wettability.
Process
After initial heat treatment to destroy all pathogenic and the majority of spoilage micro-organisms as well as inactivating lipase, an evaporator is used to reduce occluded air in order to extend shelf life, increase viscosity in order to achieve larger powder particles, and reduce the amount of energy required in the subsequent spray drying process. Gentle cooling and agglomeration ensure that the powder is ready for packaging.
